The location may be familiar, as it was Walsh Bay’s first ever eatery and one of Sydney’s original wine bar spots. Nathan Kam and Zenta Staley took over the site, down on Pier 7, in October 2013, and launched their first venue, Hickson’s Food and Wine. The aim was to create an atmosphere that was relaxed and casual, but with all the elements and knowledge to optimise what is put on the plate or in the glass. William Westman is heading the kitchen with a menu that is derived through the freshest produce, complementing the time of year and what can be attained from our growers.
